Enquanto encruzilhada cultural, os Balc\u00e3s t\u00eam uma oferta gastron\u00f3mica bem caracter\u00edstica, e ao fim de seis anos, j\u00e1 fui acumulando alguns favoritos. Em vez de molho, \u00e9 simplesmente servida no vinagre em que a dita foi conservada, que frequentemente \u00e9 bebido \u00e0 parte como um cordial azedo, s\u00f3 para n\u00e3o deitar fora. Mas, se h\u00e1 um aspecto na qual a primeira se destaca da sua concorrente, \u00e9 nas <em>radlers <\/em>que faz. Dizem que a que eu aqui como \u00e9 a vers\u00e3o herzegovina, mas n\u00e3o estou habilitado para dizer quais s\u00e3o as subtilezas e diferen\u00e7as. O sabugueiro \u00e9 um arbusto muito popular nesta parte do mundo, e o fruto e a flor s\u00e3o usados para muita coisa. Praga est\u00e1, de facto, apinhada de bancas e estabelecimentos que vendem <em>trdeln\u00edk<\/em>. Mas o dito \u00e9 uma variante do <em>k\u00fcrt\u0151skal\u00e1cs<\/em>, um bolo de espeto origin\u00e1rio do Pa\u00eds S\u00edculo, uma regi\u00e3o da Transilv\u00e2nia habitada pelos s\u00edculos <em>(sz\u00e9kelyek)<\/em>, um subgrupo do povo h\u00fangaro. E, como o legado austro-h\u00fangaro \u00e9 t\u00e3o real como o otomano nos Balc\u00e3s, a\u00ed t\u00eam.
